Recipe: Chocolate Tofu Pie
Ingredients
1 14 oz package of silken tofu
1 package semi-sweet chocolate chips (carob chips can be substituted for vegans)
1 prepared pie crust
1 tablespoon honey
1 teaspoon vanilla
Instructions
Melt the chocolate chips on the stove-top. Meanwhile, drain tofu. Place tofu, honey and vanilla in a food processor or blender. Add melted chocolate. Blend until smooth.
Pour tofu mix into pie crust. Chill for 2 hours or until solid.
Variations are easy and encouraged. Add some ground coffee or coffee syrup for a mocha-y taste, or top with fruit of your choice. White chocolate works as well, though make sure it is actually white chocolate and not “vanilla milk chips” etc., because those will not set as quickly.
I love this recipe. It’s incredibly easy and while probably not the most sophisticated, quickly produces a rich, thick, delicious pie, much like chocolate mousse. It does not taste like tofu– in fact, most people eating it will never be able to tell it even has tofu in it. As a bonus, it looks and taste like you spent a lot of time preparing it, when it usually takes only 5-10 minutes!
